Les légumineuses (trèfle, luzerne, féverole, pois) ont une capacité unique : elles captent l'azote de l'air grâce à des bactéries symbiotiques dans leurs racines (nodosités). Elles n'ont donc pas besoin d'engrais azotés et en laissent dans le sol pour la culture suivante.
